Chicken & Rice

A family favorite - creamy chicken cooked in the crockpot. Just add rice and done! Or add more toppings for Hawaiian Haystacks, which is a Utah classic.

Ingredients

  • 1-2 boneless chicken breasts
  • 1 package dry Italian dressing mix or 1 c Italian dressing
  • 2 cans cream of chicken soup
  • ¼ cup butter
  • 8 oz cream cheese
  • 1 cup water
  • White rice cooked

Instructions

  • Spray crockpot and add chicken into the crockpot with butter.
  • Mix cream of chicken soup, Italian dressing mix and 1 cup water; pour over chicken.
  • Cover and cook on low for 5-6 hours.
  • An hour before serving add thawed cream cheese (cut in pieces).
  • Shred the chicken. Serve over rice. Enjoy!

Notes

For Hawaiian Haystacks – add lots of toppings such as bell pepper, pineapple, Chinese noodles, peas, tomatoes, olives, etc.
